Each bar is made from cacao sourced from a single estate, processed minimally to preserve origin character. Honeycomb Dipped in Dark Chocolate

Tahitian Vanilla Bean Caramels

These caramels showcase Tahitian vanilla beans—considered by many to be the finest vanilla variety in the world. Tahitian vanilla offers floral, fruity character distinct from the more common Madagascar vanilla. We split whole vanilla beans, scrape out the seeds, and infuse them into cream before making caramel. The pods are also infused to extract every bit of flavor. Crystallized Ginger Enrobed in Dark Chocolate

Spicy, warming, and absolutely addictive, this combination pairs premium crystallized ginger with dark chocolate. We start with young ginger root, slice it thinly, candy it slowly to preserve natural ginger heat while adding sweetness, then dip each piece in 70% dark chocolate. The ginger provides intense spice and warmth, the chocolate adds richness and tames the heat slightly, creating perfect balance. Making quality crystallized ginger is time-consuming—the ginger must be simmered repeatedly in sugar syrup over several days to achieve proper texture and candy penetration. We make this product in small batches due to the labor involved and the availability of premium young ginger.

Fleur de Sel Caramel Collection

These caramels feature Fleur de Sel from Guérande, France—sea salt harvested by hand using methods unchanged for centuries. This rare salt offers delicate, complex mineral flavor impossible to achieve with ordinary salt. We make caramels with cultured butter from Vermont, heavy cream, and organic cane sugar, finishing each piece with a few crystals of Fleur de Sel. The salt enhances the caramel's sweetness while adding subtle savory notes and textural contrast. Each caramel is wrapped in premium wax paper printed with our Artisan Series logo.
